Knife Sharpening

This is a summary of sharpening steps for a traditional knife on the ChefChoice Model 15XV electric sharpener.

  • Start on left side on odd years
  • Start on right side on even years

Sharpening (stage 1)

  1. Pull blade through left and right slots (3-4 sec/pull for 5” blade)
  2. Check for burr on last side of pull along entire length
  3. Repeat until burr is present

Honing (stage 2)

  1. 1 or 2 pair of pulls (3 sec/pull for 5” blade)
  2. Check for burr
  3. Repeat until burr is present

Stropping (stage 3)

  1. 3 pairs of pulls (3-4 sec/pull for 5” blade)
  2. 2 pairs of pulls (1 sec/pull for 5” blade)
  3. Check sharpness

Notes

  • For meat you can skip stage 2
