Pancakes (Keto Macro Cakes)

Yield: 30 (?) cakes Prep Time: 15 min Cook Time: 30-45 min (2 cakes at a time)

Ingredients

  • 8 oz Cream Cheese (room temp)
  • 8 large eggs
  • 2 oz (1/4 cup, 1/2 stick) Butter (room temp)
  • 62 g (2 scoops) Protein Powder
  • 1 tsp vanilla extract
  • 1-1/2 tsp of baking powder
  • Sugar Free Maple Syrup (for topping)

Procedure

  1. Whisk eggs in stand mixer and transfer into another bowl.
  2. In stand mixer combine cream cheese, butter, and half of the protein powder.
  3. Slowly add eggs until completely incorporated.
  4. Add remaining protein powder to the wet ingredient mixture and mix until fully combined
  5. Add the vanilla extract and baking powder and maybe a little salt
  6. Heat a skillet on low heat (~2.5)
  7. Very lightly oil pan. (Too much oil will cause the cakes to have holes and not cook evenly.)
  8. Pour in the pancake batter and cook for 2 minutes on each side.
    1. When you see bubbles start to rise through the batter that’s usually a good indication it’s time to flip
