Tabbouleh

Ingredients
Greens
- 2 bunches parsley (about 2 cups chopped)
- 1/4 cup fresh mint leaves, finely chopped
- 1-2 vine-ripe tomatoes, small dice
- 2 green onions, finely chopped
Dressing
- 1/3 cup extra virgin olive oil
- 3 tbsp lemon juice
- 1/4 cup (4 tbsp) fine #1 bulgur or hemp seed
Seasoning
- salt
- black pepper
Procedure
Dressing
- Whisk the olive oil and lemon juice in a small bowl until well combined
- Stir in the bulgur or hemp seed
- Let the grains soak up the dressing until they are plump and most of the moisture is absorbed for about 15 minutes
Greens
- Prep salad while grain is soaking
- Make sure parsley is as dry as possible
- When the bulgur is plump, and the lemon-olive oil mixture is mostly absorbed, combine with greens
- Salt and pepper to taste
- Refrigerate
Notes
Serve on crispy romaine.
